Crispy Herbed Potatoes

 

Ingredients:



4 medium potatoes
2 red onions
6 tbsp. olive oil
4 oz. Gruyere cheese
2 tbsp. chopped basil
salt & pepper

PREPARATION:

1. Peel potatoes and slice very thinly. Place in a bowl and cover with cold water. Allow to stand for 10 minutes. Drain.

2. Peel and slice onions. Heat the oil in large frying pan over medium heat. Add the onions and sauté for 2 minutes. Add the potatoes and cook for 15 to 20 minutes, turning frequently, until they are tender and golden.

3. Grate the Gruyere cheese. Add the basil to the pan of potatoes and stir in. Sprinkle the cheese over the top of the potatoes and cook for 2 minutes, without stirring, until the cheese melts. Season with salt & pepper and serve.
